To my knowledge there aren't any major differences between 2000 and 2005 as far as it comes to things you're looking into.
Personally I would go with broader raid 10 set...

same way as before, open server properties and go to the "processor" tab.
Just remember to untick the affinity settings below the box, so you can modify your processor count.

dunno if this is the case, but if you move ALL your db files from the local drives to a SAN area and nothing else is left on the local...

I haven't ever tried to move the model database, but a stupid question, have you checked that the account running sqlserver has access to your new drive/folder (local system/nt account)?...

You have missed one big change in SQL Server 2005 compared to the previous versions. There is no access to the system tables anymore or the old system table structure...
