When you backup system files do you backup open files? If not you may find they where skipped by the backup.

I'll suggest that you trial SQLLitespeed, and maybe you're like it so much you could get the budget to buy it

You could use a server side trace to record this information to a file, then load the file into a table, and query it.
See sp_trace_setevent in bol for what events...

With that approach you will also need to create all the accounts on the 2000 server.
In SQL 2000 you get a copy database wizard which I seem to remember works...
