To add insult to injury, management just took backups/restore/DR away from me on our newest production sql cluster, and handed it to an untrained Systems Team engineer using Commvault Idata...

How about this approach?
Before Conversion:
A. take final transaction log backup
B. execute CHECKPOINT
C. Set simple recovery mode
D. take pre-conversion Full Backup
After the conversion I know we must resume full recovery mode...

All databases/backups are either on the Netapp disk device or on Commvault storage. There is no sql data on the two sql cluster nodes that will get upgraded.
