In RTM DB mail does work on 64 bit bit, agent using db mail on 64 bit does not.
This is fixed in SP1

The OS will claim as much memory as it needs just like it does under 32 bit windows, wherever you heard this from is probably getting confused with the OS...

If you have June CTP or Sept CTP then select View|Summary View, its a little different from TaskPads but serves the same purpose.
