You can use SQL server 2005 native column encryption methods to encrypt/decrpyt the data .
Until someone knows the keys even if this is restored in another server its nearly impossible...

Why don't you add another column say "Language" and while inserting rows in the table insert a value say
"HINDI","ENGLISH" .... This way you would be able to get a count...
