Should I push to install SQL 2005 std 64 bit edition or SQL 2005 std 32 on our Windows 2008 64bit server?

64-bit, I'd say. I can't think of any reason to want to run a 32-bit application on a 64-bit operating system.

Will I have any issues accessing it through SSMS on my desktop? The SSMS i have is 32bit. Also, will I be able to edit maintenance packages,etc?

You should be able to do all of those things. We manage our 64-bit servers from our 32-bit desktops.
