Try this.
0. run update statistics with fullscan on all tables involved (by means of PK/FK)
1. run a sql profiler trace before running update. include execution plan events (showplan all and showplan statistics)
2. run update.
That would tell if there is a set of recursive triggers goging on or the update is picking up some bad execution plan
