We have a SQL Server 2005 that is a backend of a handful of internal applications. Performance has been sluggish so I'm looking into what could be the issue. One odd thing I'm seeing is that the memory usage will be constant at like 1500MB and then spike to 0 and immediately go back to 1500MB. This happens somewhat periodically. I'm looking at the logs but there are no warning/errors. Is there a way to get more verbose logging that might shed some light on why the memory is dropping?

I'd suggest you're in between refreshes of the counters. You don't memtion which memory counter you're monitoring. The management views contain a significant amount of information - check out BOL for more details.
