I am considering upgrading SQL Server 2016 express to 2016 Enterprise.
Is it possible to just upgrade, without creating a different instance/server name
and keeping all databases that I currently have in Express version?

Yes. Edition upgrades are done using setup.exe (SQL Server Installation Center), select maintenance and then Edition Upgrade.

If you wade through this document, you will find that this is a supported upgrade, so the short answer to your question is 'yes'.

You can go up in term of edition, but you can't go down.
I would be curious to know a business case that requires an upgrade from Express to Entreprise.
