  I know that I can't drop and create the table. Rebuilding of indexes could also cause issues since I know that several users could be sending data at the same time.

  Depending on the index type, and if you're on enterprise, you can rebuild it online.

  So what is the real problem here? What do your developers think is going to happen to the statistics by deleting or truncating the data? You can also update the statistics manually at any time ... but deleting or truncating will cause them to auto update regardless (test it yourself with STATS_DATE).
