Coming into this a little late, but is there really a good reason to use the built-in SSMS dialog for 'Specify Values for Template Parameters'? It seems you have more flexibility making your changes directly to your templated script. The only use case I really see of value is when you had variables placed in various locations over a very large script file. This would give you a good collection area for any changes that needed to be made.
Am I missing something with this feature?

I think it depends on what's going on in the script. If you reuse a pattern and have certain items repeated, this can be helpful.
Using it sparingly doesn't mean it's not useful. It can be easier than find/replace for some people.
