Awesome that you are upgrading, and that you are sharing the details! Please share more on the progress. I have a vested interest in that I am running SQL Server 2019 for my custom business system, ETL/EDI, and reporting solutions, and am planning an upgrade to SQL Server 2022 starting in May 2024 (which will likely also include an OS upgrade as well). Best wishes for a smooth upgrade.

We're upgraded. ssc-db-1 and 2 are decommissioned and 3/4 are live. Here's 3

I had nothing to do with this. AFAIK, this was a simple backup/restore, with norecovery and then log restores to shrink the window. The site was redeployed with new connection strings and things are working.
I'll try to get some more details on any resources changes or issues encountered.

May I ask, did all the databases get moved to Compatibility level 160 ? It would be interesting if anyone has any feedback on LATCH improvements as to speed wise, plus any big queries that are consistently improved performance wise, e.g. via the parameter sensitive plan optimizations (SCAN / SEEK).

Hard to tell if the IQP stuff helps us. The queries for WordPress aren't great, so it may not show up for us. Plus we're mostly read, relatively little write.
