Visual Studio is installed on all my SQL Server 2005 servers. Can visual Studio be uninstalled without harming SQL Server 2005?

It's definitely Visual Studio and not BIDS? (Business Intelligence Design Studio) which is the cut-down version of VS which ships with SQL Server?
Either way you should be able to uninstall without affecting SQL Server, although BIDS is a component of the SQL Server installation so in order to uninstall it you will need to modify your SQL Server installation and untick the box for that particular component.

If you run VS 2005 and in the splash screen you see "Vs C++, VS c#, VB, Web developmnet", you can deinstall it from the control panel - add remove programs. If you see in the splash screen SQL tools only, it's a part of the SQL development and can not deinstall it.
By other way, if you have a domain where your SQL server is running, you could apply a domain policy or user level permissions.
