We are currently on SQL server SP1. Should we go ahead and apply SP2? What are your recommendations? Do you think it is critical that if we do not apply this updates are we are not having any issues with SP1? Thank you,

My opinion for process - install it on test, test the crap out of it, if no fault found, install on live.
As for "should" you install it? I would. SP2 will come with security and bug fixes. If your DB is exposed to the internet (which I hope it isn't), SP2 will make it more secure.
The above is all just my opinion on what you should do.
As with all advice you find on a random internet forum - you shouldn't blindly follow it. Always test on a test server to see if there is negative side effects before making changes to live!
I recommend you NEVER run "random code" you found online on any system you care about UNLESS you understand and can verify the code OR you don't care if the code trashes your system.
