So, I hear rumors that SQL Server 2008 can only be installed on 64 bit servers? (2008 or 2003) However, I have SQL 2008 installed on two 32 bit servers 2003 servers. What's the deal with this and are their any limitations if it's installed on a 32 bit server

It will install on 32-bit. The main limitation is the amount of memory that can be used. Therefore, with current hardware being both 32 and 64-bit capable, I'm not sure there's a compelling reason to stay 32-bit.

Yeah, that's pretty much my understanding too. Better & more memory management in the 64bit operating system, which benefits SQL Server.
I don't know where you heard that it's 32-bit only because that's patently false.
