I have a Windows Server 2003 R2 Enterprise x64 SP2 OS and I looking into Purchasing SQL Server 2008 Enterprise 64-bit.
Are the two compatible - I have not seen anything from MS indicating they are or vise versa
and if they are, is this the best selection of a SQL Server 2008 edition for my OS?

It clearly indicates the versions are supported.
Regarding the best selection of SQL server 2008 edition, you know the requirements at your end, so you will have to decide based on that.

Enterprise Edition has all set features available.

I saw this already but was concerned that it did not specifically say Windows Server 2003 R2 Enterprise x64. It just mentioned Windows Server 2003 Enterprise x64 and not the successor.
But it does mention R2 for Windows Server 2008 Enterprise x64.
