Attempting to send an Alert and email for when a job fails but getting error:
Server: Msg 18030, Level 16, State 1, Line 0
xp_startmail: Either there is no default mail client or the current mail client cannot fulfill the messaging request. Please run Microsoft Outlook and set it as the default mail client.
Outlook is (my) default client...what am I missing here?

Have you set the SQL Agent to run under the same domain account that your mail profile belongs to?

You can either do it through the services console in windows or under the SQL Agent properties in Enterprise Mangager. Also you might have already done this but you will have to sign on to the database server as this account and configure the Outlook profile.
