Would it be safe to say that I shouldn't have SQL doing the backup to my SharePoint because if I need to do a restore, SQL won't be able restore the configuration & Central Admin content database (it's not supported) and the index index will always be out of sync.

Do you have any links to support what you have detailed here?
We have always used SQL to backup the databases for SharePoint, granted yes that the crawl data maybe out of sync due to when the crawl starts and the backup finishes but there have never been any issue in restoring content.
The following URL http://technet.microsoft.com/en-us/library/cc261687.aspx details the plan of action for backup and recovery of SharePoint, it might be worth a read as you can see it deatails that both SharePoint and SQL backups are used to recover 9 out of the 16 points.

AFAIK a SQL Server backup of all the databases means nothing would be lost. (All of SharePoint is in the databases.) I read this somewhere in the documentation - see previous poster's link.
