I have the option of hosting my DBs on the Enterprise Edition of Win 2008 R2 but I need to make a case for it versus Standard. As a DBA I'm not sure what I gain from the latest and greatest OS. Could anyone please help me out.

look at the options in both and if you do not need any of the features in enterprise now or in the future then standard would be sufficient.

I typically only go EE on the OS when I intend to use clustering.. The other reasons I could think of are more than 32GB of RAM can be used and if you have more than 4 processors (not CORES).
But for me clustering is usually the trigger.
