This may have already been asked previously, but - have you verified that the client tools have been upgraded to at least the same level as the server you are accessing?
If not, then that is most likely your problem. If you create a maintenance plan using a client that is on an un-patched SP2 version (9.0.3042) against a server on SP3 it can cause problems.

Aha... great point re. version of client tools.
Here's one for ya... I applied a hotfix to my My SP2 server to fix an SSRS issue which brought the version to 9.00.3073.00. However, my SSMS is still at SP2 9.00.3042.00.
I would assume (hope) hotfixes which do not apply to client tools such as mgmt studio or BIDS shouldn't cause this problem when applied to the SQL Server instance.

If the hotfix does not update the client tools - then yes, it wouldn't cause any issues. However, I have found that not updating the client tools at the same time has caused issues.
Especially around the SP2 releases - which you should have applied the fix that took you up to 9.0.3054 instead of 9.0.3042 because there were significant issues with maintenance plans in the original release of SP2.
I would recommend upgrading to SP3 on the client tools (at least, possibly even applying the latest CU's). Now, if you have any pre-SP2 systems you are going to have to remote into the server and create/modify maintenance plans because post-SP2 client tools will cause all sorts of problems.
