We are currently running SQL 2000 Enterprise edition on all our servers. When we upgrade to SQL 2008, do we need to upgrade to the same Enterprise version or can we use the Standard ?
What functionality will we lose?

If you do an in-place upgrade, you cannot downgrade the Edition.
If you install a new instance on the same or a different server, you can install the standard edition and you will be able to attach or restore your existing databases. If you have used any enterprise-level features, you will have issues.
