Does anyone have any words of wisdom regarding this command? Anything to watch out for? Is it a good idea to run it on any database to ensure that statistics are created???

From BoL "Creates single-column statistics for all eligible columns for all user tables and internal tables in the current database."
The only situation where this should be considered is when all of these are true:
1. The data is updated on an infrequent basis such a weekly
2. The queries are mostly ad-hocThere
3. There is sufficient time to create all of these statistics.
In short, a data warehouse or operational data store.
