Looking at doing a migration of server and upgrade at same time from 2012 to 2016. TO minimize downtime was looking at doing a full backup and restore of 2012 server to 2016 leaving in standby mode and then at cut over backup and restore transaction logs. Done this with 2008r2 to 2012 not sure if able to with 2016. ANyone tried this path before?

You can't restore up-version and leave the DB in standby and be able to restore further logs. You'll have to restore WITH NORECOVERY. With that change, your plan will work.
You've done the pre-upgrade testing?
