Dear all - Just wondered, is it ok to just simply restart a Server which has SQL2008 residing on it, after applying Windows Updates?

If the updates require a Windows restart, go for it. You'd better do it when users are not using the database, so plan downtime with them.

I take it it's safe to just restart without stopping the SQL Service?

Perfectly. To be honest, it's fairly safe (at least from SQL's side) to just power off without any form of clean shutdown (my home server will attest to that, having had power cut 2+ times a week for the last 2 months).
