I'm guessing there shouldn't be a restriction but can I run a 2005 server to take advantage of the new features, particularly Report Builder for the users, over a SQL 2000 database on another server?
I'm pretty sure the answer's yes but can someone confirm please?

I don't think you can actually. I think that RS 2005 is licensed via SQL server 2005, so you have to have a licensed version of SQL 2005 in order to take advantage of the new features in RS 2005.
Someone please correct me if I'm wrong.

Thanks Megan. Do you think that applies if I'm running Report Builder on a server running SQL 2005 but using a SQL 2000 database on a different server as the data source?

You need SQL 2005 for running RS 2005 server, but for the data source you can access SQL 2000 with no problems.
