We are on a very tight schedule -- need to have approvals, procurement, shipment, setup of new servers w/ in 2 weeks.. Mgmt can only get me 1 server for SQL right now.. and the 2nd server in about 2 months.. but needs the system up/running asap.
Is it possible to install just the 1st node of a SQL Server 2008 R2 cluster and have it up and operational.. then come back in 2 months and add the 2nd node to the cluster?

Yes, follow the procudure for building a new Windows Server Cluster and a new clustered instance of SQL Server. You will then have a single-node cluster. You can add the second node later when you have the hardware.

Dan - thanks for the expediant reply. I've put up a few 2-node clusters over the years ( a dozen or so ) but never installed just the one node... w/ anticipation of installing the 2nd node at a later date..
