I will like to know if anyone uses policy based management and what kind of policies have you got in place in your shop.

Absolutely love it!
If you're going to use it though, I strongly recommend navigating over to CodePlex and getting the Enterprise Policy Management Framework. It allows you to run policies against 2000 and 2005 servers as well as 2008.
We're looking at backup age, backup jobs enabled, log backups enabled, and working on some others. We're trying to only implement the stuff we really, really need in order to avoid noise.
If you can get a copy of Buck Woody's presentation from this year's PASS Summit, More Servers Less Control, I strongly recommend that as well. Great information about implementing PBM with central management servers and using the EPM.
