I'm looking for a performance and tuning course for SQL Server. Has anyone come across a good course? I'm looking for a class that teached how to use SQL trace and interpret it, pssdiag, and other tools.

Microsoft provide a number of Technet and msdn events which often cover the areas you are seekeing - check out the Technet training. I don't think any official courses cover these as a group. Years ago there were tuning courses, I did the 6.5 and 7.0 versions. There may be a 2005 version in the offing.
