Never having had to restore from a trans log backup, how is it done? And how granular is it? My most frequent restores are "I deleted x rows in y table - can you replace them?"; is this possible? And to do that, I want to backup the trans log in separate files (not overwritten) every, say, hour or three?

If you get requests like that often, you might want to consider investing in a tool like Lumigent's Log Explorer, which will let you roll back without destroying any activity that took place afterwards (e.g. if user A deletes some rows, then user B inserts some other stuff later, it won't kill user B's inserts if you recover user A's rows).
