As we apply service packs to Sql server in critical production environment,if something goes wrong its very tedious and very time consuming process to uninstall whole instance and install new instance and revert back to previous version. So it would better if we have an uninstall option in Add\Remove programs.

most updates affect the system databases, i dont think an un install would not be a viable option, although nice too have. An un install would have to tie in updates to system files and the databases and create un install locations on the file system, how much disk space would that require?

Good practice for doing upgrades in a Production environment is to take an image of the relevant disks before starting the upgrade. That way if the upgrade fails you just restore the disk images.
If you upgrade without having a disk image, you are definitely outside of industry good practice, and have to accept the risks involved.
