We're running SQL Server 2008 with the data stored on RAID drives connected via SATA cards. We got a new box with Windows Server 2012 R2 and SQL Server 2014 installed. When we move the data drives from one box to the other, I assume we should first detach all of the databases? Is that correct? Are there any other measures we need to take to make the transition smoothly?

you are moving the data disk from one server to another server physically make sure this done properly.
i suggest to take the full backup of all your databases once the backup is done , detach the database and move to the other server.

importing the RAID array on the new server may be possible depending on the controller.
However, I would take a full backup of the drive first to prevent any data loss
