I'm currently running SQL Server 2008 R2 and a mirror with the same version. I'm contemplating upgrading to 2016. Eventually I'd like to use the always on availability feature. But until then I'm wondering if I can run a 2008 R2 (primary) and a 2016 Mirror. I'd like to migrate both servers at the same time, this is more of a contingency plan.

You can mirror disparate versions of a sql server database but the mirror must be the higher version. If theres ever a failover top the mirror you cannot move back.
Just wait until you're ready to make the upgrade and upgrade the mirror first, then failover.
Upgrade the primary which is now the mirror and if you want to fail back again
