I am System DBA managing more than 500 instances and we are having some analysis service install for 10-15 servers
Could you please tell me what all may be the day to day management tasks for maintaining an analysis service instances ?
Is there any specific tasks that we do for sql server like space management, failed job troubleshooting etc for Analysis service instances also ?

You would also want to be monitoring your SQL Agent tasks and/or SSIS tasks that you have setup to do the Processing.

But this does not tell me what all may be the daily activities i should do with the analysis service instances...

I guess the items I provided are more related to performance and optimization. Something that is very important and should be looked at and the second one offers a great solution for you to monitor the usage and performance in a automated fashion.
For the daily tasks I would say you would want to look at the following items:
1) Backups
2) Processing
3) Available hard drive space
4) Available memory on server
5) CPU utilization on the server
