Don't know if this has been discussed elsewhere but are backups and restores also possible between linux and windows?

According to the documentation yes, see in the Docs "Backup and restore of SQL Server databases on Linux".

Yes, you can restore backups from a SQL Server on Windows database on a SQL Server on Linux instance.
