We have log shipping between 2 EC2 instances.
A - primary EC2 instance
B- Secondary EC2 instance
C- 3rd ec2 instance same size as B
The copy job when configured on server B - keeps failing
If the same copy job is configured on server C - doesn't fail - works perfectly fine
The log backup sizes are pretty large - 2-4 GB every hour.
I understand the copy job uses some filecache and this may cause issues in earlier versions of windows but these servers are all Windows 2016.
The only difference between Server B and C is amount of stoage they have - not sure if that impact file copies.

Are your log backups occurring every hour? I would reduce that to 15 minutes. By reducing the time between backups, they should decrease significantly in size, and subsequently applying them to the secondary should be faster with less resources required.
