it is possible to configure log shipping from 2000 to 2005 sqlserver
and viceversa

I have never tried using the built-in log shipping tools to go from 2000 to 2005, but custom scripts (backup log on 2000 and restore on 2005) definitely works. Log shipping from 2005 back to 2000 will not work.
However, the only real reason to do this is during upgrades. SQL Server 2005 can interpret 2000 transaction log backups, but 2000 cannot interpret 2005 log backups. So this is a one-way operation. During an upgrade, it allows you to have a very short outage as you take the final log backup on 2000 and then restore to 2005 and bring it online.
I can't see any value in this other than for upgrades. If a disaster occurs, your 2005 version of the database cannot be used to reattach back to a 2000 instance. The best you could do would be to copy the data from 2005 and back into a restore/recreated 2000 database.
