I'd actually restore prod right now on a test server and give it a whirl while on site.
I'd possibly change the settings to only print and not run. That way you'd see what would run.
Then just let it fly to see how long it takes and how much log activity you need to prepare for.
The first run will certainly be the longest by far. Then it should speed up. Especially if you run daily and tweak the fill factors to something more reasonable for the actual use of the table.

That's exactly what I'm planning to do.
I'll pickup a last weeks full backup, restore it on the test serv and try to run a script.
