  I have been tasked with documenting all linked servers at our site, as well as finding all stored procs that use said linked servers. Is there a way to either a) programmatically extract this info, or B) using SQL tools document this? If not, are there any 3rd party tools tht can do this? Thanks all.

  sp_helpserver will tell you which server are the linked and remote servers.

  You may then search syscomments table to find out those procedures.
