Licensing information available on the system:
http://blogs.msdn.com/sqlblog/archive/2006/11/10/tracking-license-information-in-sql-2005.aspx
Since SQL 2005 does not automatically track licensing information anymore, your best bet to find licensing information is to contact your rep or find your sales contract listing your licensing purchases.

I had the idea, if you have 30 user cals, you can not run more thant 30 query at the same time.
how they controle this?

CALs do not control the number of concurrent queries. The CAL "controls" the number of Concurrent Clients. A CAL is associated with a server or desktop.
If you are licensed per processor (usually a better model for many shops), then there is no limitation on Clients connecting to your database (except the physical limitations imposed by the hardware).
