Hi,
I am running the below version in my test environment:
Microsoft SQL Server 2008 (RTM) - 10.0.1779.0 (X64) Nov 12 2008 12:10:04
Is this the latest possible version? How do I determine if anything has been released since that time?
Thanks.

That's where I'm at, Cumulative Update Pack 2.
You can keep an eye on SQL updates (including service packs) at http://blogs.msdn.com/sqlreleaseservices.
If you are using any kind off RSS reader you can subscribe to the feed at http://blogs.msdn.com/sqlreleaseservices/rss.xml

Well, that site doesn't mention anything about CU2 for SQL Server 2008 SP1.
edit: At least not while writing this...

I have an RSS feed to http://blogs.msdn.com/sqlreleaseservices/default.aspx which contains the up to date information.
