I know the recommended stripe size is 64k but is there a practical means of working this out dependant on the size & type of array, or should I be concentrating on average i/o?

I think empirical is the only way to know for sure. Set it up, test, on to the next config. Intel has a tool called IOMeter that will drive the disks to the point of saturation, kinda cool.

MS has a SQLIOStress utility (aka SQL70IOStress) - see URL
http://support.microsoft.com/default.aspx?scid=kb%3Ben-us%3B231619
which has replaced the earlier SQLHDTST [in MSSQL RK but doesn't work with W2K] at
http://download.microsoft.com/download/sql65/Utility3/1/WIN98/EN-US/Sqlhdtst.exe
either way these make a good thrash and ensure your hardware ain't broke, so should be used after every [major] hardware upgrade [before the engineer slopes off] - every DBA home should have 'em !
