I had a situation where my Availability Group was broken and so I removed all databases from the AG, but the AG still existed and the listener was pingable. All of my applications were still able to access the db's through the listener name, even though there weren't any databases listed in the Availability Databases folder.
I was under the assumption that connecting to the listener would only present the dbs in the actual ag the listener was setup for. Does this mean that the listener simply points to the IP of the entire server, making any database available to it no matter if it's part of the AG or not? If anyone could explain I would appreciate it, because it goes against my expectations,

I am very new to this as well. We just brought up our very first Always on system this week. I believe the listener will allow you to get to dbs even not in the Always On Config.

Connecting through SSMS?
The listener connects you to the instance that's the Primary replica for the AO group, you'll see any databases you have access to.
