We have to Change in All the instances..
Suppose if you have 10 GB Ram,Than assaign 8 to 9 GB RAM for SQL(8-9 GB is combindely for all the instances) and that 1-2 Gb RAM is for OS and other applications

It depends on what else will be running on the server. 2GB for the OS on a server with 3 instances seems a little low to me. I would start with leaving at least 3-4GB free, monitor, and then increase a little at a time from there until you reach a stable config.
