I need to downgrade my existing SSAS 2008R2 Enterprise to Standard Edition. Has anyone ever done this and is there any kind of procedure I can follow?

You can't downgrade, you would need to completely uninstall and reinstall.

If you also have SQL on the box, you'd need to uninstall and reinstall standard edition as well:
Cross-version instances of SQL Server 2008 are not supported. Version numbers of the Database Engine, Analysis Services, and Reporting Services components must be the same in an instance of SQL Server 2008.

Thanks. Yes, I understand I need to uninstall and install. I was just wondering if there is anything I need to watch out for. Do I need to copy anything off for copying back later, etc.

Actually probably your best bet is to build another box with standard edition then migrate everything over to it, that way you'll know if you've missed anything.
Then you can follow a procedure on synchronising SSAS servers. http://www.mssqltips.com/sqlservertip/2938/how-to-synchronize-two-ssas-servers/
Turn off the old box and setup a DNS alias to the new box, then you have a rollback strategy.
