Is there another means to determine how long a database that is in recovery will take to recover besides?
1. Looking at log files for percentage complete updates.
2. Querying sys.dm_exec_requests

Are you stuck with a recovering database right now, or did you mean this as a general question?

No, there isn't. Also be aware that the places you mention are estimates, not necessarily completely accurate values.
