from what I understand in sharepoint 2010 you can use filestream to store the documents off to disk instead of in the database, all it stores is the metadata to the filestream share and the document, like a UNC path if you will to the document.

unsure if 2007 has the same capability of using filestream

SharePoint 2007 does not support that, that is a feature in SharePoint 2010.
