Each time I try to go create a maintenance plan, I keep getting this error - I am leaving the server name blank:
TITLE: Microsoft SQL Server Management Studio
------------------------------
Property ErrorLogFile is not available for JobServer '[ ]'. This property may not exist for this object, or may not be retrievable due to insufficient access rights. (Microsoft.SqlServer.Smo)
Any ideas anyone? It would be highly appreciated

This is generally caused by having a lower version of the client tools accessing a higher version of the database. For example, your client tools are probably at RTM and the server has been patched to SP2 or SP3.
