If I want to change mdf and ldf files that a database uses should I:
detach database, get rid the old mdf and ldf files, put the mdf and ldf that I want to use in the place of the old ones and then attach the database?
Or is there a more correct way to do this?
Thanks!

Not exactly, we copied the mdf&ldf files (used detach/attach), sent them to our vendor, they updated them and sent them back. So I just detached the database, renamed the old mdf&ldf, them moved the updated mdf&ldf into their place and attached the database.
Is this ok, or is there more involved? Thanks very much.

Perfectly Ok!

In addition to Noel's response: Is there data involved? Is this Production? Is this acceptable from your IS security team's persepective? Was this checked to ensure that virus/worms/other nasty stuff was not "awakened" when the vendor database would be brought on-line?
What we do here is have the vendor send us the scripts to make the changes and then review and apply the changes.

Thanks for your responses. It worked well. I appreciate the security concerns. If/when we have to work this way with a vendor, how can we check the files for viruses/worms? Thanks again.

Denise,
I have to admit this is very unconventional (sending the mdf/ldf to the vendor) but if on top of that you are expecting viruses from them I think you have bigger problems.
By the way you can use any antivirus software to scan those files.

I'm not expecting viruses, I trust our vendors. I was just addressing the previous response. Thanks again for your help.

Noeld, we've actually had to perform a conversion in this manner just recently. A third party product chose by the user community (with no IS input at all !) caused conversion headaches (it just flat out did not work !). So we were reconciled to the fact that we had to detach the database and ftp the mdf/ldf files for conversion. Then we just had to ftp the resulting mdf/ldf files back when they were through (1 week later !).
