I am thinking it might be good for me to become certified as a Sql developer on SQL 2005/2008.
Can anyone recommend any good prep material for self-study? I haven't looked at material like this since the SQL 6.5 days, so i think its time to update myself.
Can you still get a certification just on the SQL product itself?

Yes you can, look up the MCTS or MCITP certifications. you can specialize with SQL Server. For 2005, the base test was 70-433, and it has a good portion of hands on, simulated things to solve, so you need practice with the tools.
For books, I'd pick up any cert book. I wrote one for 2005, but they're all similar, and cover what you need. They also organize your studying so you can proceed logically.

That would be the database development one right? That's the one I do want to focus on.
Does it cover normal forms at all? I really want to get a firmer understanding of those.
