It sucks to no end that it wasn't an option to schedule a profiler to start from the GUI at specific time in SQL SERVER 2000.
But in SQL 2005 I don't see this option either! Am I missing something?

Maybe they thought that only a service could run a scheduled job. I think you could use Windows Scheduler and run Profiler with some parameters.

But I am not able to find parameters with which to specify to start the profiler.

not sure if it applies in your case but how about putting an "endtime" filter on your trace; unfortunately it won't allow you to filter on a finer detail (eg. profile on thursdays only) but it will get you data from 2005-09-15 00:00:00 to 2005-09-15 18:00:00 for example.
